Who doesn’t like pancakes?
In my home we don’t “like” pancakes… we LOVE pancakes!
A spin on pancakes is to add dried fruit (like raisins, apricots, peaches, or apples) and oatmeal and a bit of cinnamon to the batter for heartier, more filling, flapjacks!
1 1/2 cups of whole wheat flour
1/2 cup uncooked oatmeal
1/2 cup dried fruit (or more up to a cup)
3 teaspoons of baking powder
1 teaspoon salt
1 2/3 cup of milk (whole milk makes richer pancakes, almond milk or coconut makes sweeter low-fat pancakes)
2 tablespoons melted butter
Mix all ingredients in a large mixing bowl until batter is almost smooth.
Heat a skillet and melt butter or oil of your choice… and pour batter into small circles. When the top side bubbles, check the underside for browning, and if it has, flip the pancake and brown on the other side.
Enjoy with honey or maple syrup.
